Memorial Day Weekend Recap + Monday-ish Madness Link Up

Hope everyone had a super long weekend. My shift got cut on Saturday so I ended up with four days in a row! This is the first time I've had more than one day off in the last five months!

Nick and I decided to head to the Battle Creek area on Saturday and visit the zoo.



Miniature horses! I need one!



 There was an opportunity to feed the giraffes (!) and I decided to be brave and do it. In case I haven't mentioned it, I have a huge fear the petting zoo. I think the animals are going to attack me. Hey, those goats can be aggressive. Anyway...



It was s nice to spend some time outside in the sunshine!

After the zoo we headed to Beltline Bar for some yummy Mexican food. They have amazing fried ice cream that I wish I would have gotten a picture of but I was to busy getting it in my mouth.



The rest of the weekend was a big sports weekend for us. The Monaco Grand Prix and the French Open started on Sunday. I finally started some spring cleaning.

Friday Five 5.22.15

Friday!
//1// My sweet little niece had her first dance recital last weekend. I live in Michigan and my entire family lives in Pennsylvania so, unfortunately, I was unable to be there. I started dance when I was her age and it became a life long passion. I was bummed I missed it, but was happy to hear that she did awesome! Isn't she the cutest?!


//2// How awesome did Danica McKellar look at the Billboard music awards this week? Love her dress! She's hot!

Got my ordered lavender in the mail this week! My allergies are terrible this month so as soon as I received this I started diffusing the allergy trio - Lavender, Peppermint, and Lemon. We started doing blood draws on each other in class and I've been using the lavender on some gnarly bruises I have from that. Ask me more...


//5// Still waiting on my official externship placement (ugh), but we did get our national exam study books this week!


Two more weeks of skills validation in the class room and then off to my externship!

Starbucks Passion Tea Lemonade Copycat Recipe

Ingredients:
2 Tazo Passion Tea Bags
16 oz Water
4 oz Lemonade
2 tsp Sugar
Directions
1. Boil water.
2. Remove from heat and add tea bags and sugar.
3. Allow to sit for 15 minutes.
4. Remove tea bags and refrigerate for at least one hour.
5. Add ice to a closable container.
6. Add 8 oz of tea and 2 oz of lemonade per serving.
7. Shake well to mix.
8. Enjoy!

Monday Madness 5.28.15

How is it Monday already?



I hope everyone had a super weekend. As usual, I spent my working! I have a lot more hours this week than I've had I the past two to three weeks. Total bummer, but I am going to just Saturdays in a few weeks when my externship starts!

On Thursday night my friend Sam and I went to a Speed Oiling event at our local country club. It was hosted by a bunch of local Young Living reps. I was a bad blogger and took zero pictures.

Have I mentioned that I'm a Young Living rep?




I've been lazy about using my oils since I've been so busy, but that's really not a great excuse. I was rejuvenated on Thursday night and have already started to put them into my daily routine again! Have you used essential oils? I love to swap stories!

Saturday was Scout's 6th birthday! I love birthdays in general and his is not an exception. Nick and I got him his favorite raw hide rounds which we call his "donuts."


I couldn't help be a little sad though. I don't want him to get any older because I want him to be around forever!



I only have three more weeks in the classroom before I head out to my externship!!! I am really hoping these three weeks go fast. I'm ready to get hands on and mingle with some new people. After being in a classroom with the same people for 32 hours a week for five months I'm just ready to move on. #WornOut

Friday Round Up 5.15.15

I hope everyone is having a super Friday and are getting ready for the weekend!


//1// On Monday after class some of my friends and I went out to celebrate me paying off my undergrad and getting our externships!




//2// I would just like to say how much I hate Taylor Swift. She's such a hanger-on which is weird because she's uber famous yet she tends to latch on to anyone who's popular at the moment. We saw her do this when Lorde blew up. I make my case and point with Gigi Hadid.


Uh, she makes me sick. Once your star starts to fade she dumps you like yesterday's trash. Just like her men I guess!

//3// So this West Michigan family should get a reality show. They have 13 sons! They've also made national news on People.com!

Brown Rice Enchilada Casserole (Vegeterian!)


Ingredients
2 cups rice, uncooked
1 10 oz. can enchilada sauce
1 package taco seasoning
1 cup black beans
1 cup corn
1 Roma tomato
1 avocado, halved, seeded, peeled and chopped
3 cups of shredded Mexican blend or cheddar cheese
Fresh cilantro, chopped for garnish
Salt and pepper to taste

Directions
1. Preheat over to 375 degrees.
2. Cook rice according to package directions in a stock pot.
3. Measure corn and black beans and add to the cooked rice.
4. Stir in enchilada sauce, taco seasoning, and cheese.
5. Pour mixture into a greased casserole pan.
6. Bake in oven until bubbly and until cheese has melted, about 15 minutes.
7. Garnish with tomato, cilantro, and avocado.
8. Enjoy!





Monday Madness 5.11.15

So this happened...


I got a tattoo on Friday night!

I've always wanted to see someone get a tattoo so my friend from school happily invited me to watch hers. So, I had kind of been thinking about getting one, which is a little odd. I was always very anti-tattoo. I never, ever wanted to get one before. So spontaneously I decided to get one! Talk about totally crazy.


I got a white ink heart with a paw print because we all know I'm obsessed with my dog. It's really small and tasteful on the top of my foot. I still need to let it heal and the white will pop out more as it heals.




In case you missed it on Friday, I got an externship! I happily accepted an externship with Spectrum Health, one the largest healthcare networks in West Michigan.I'm not sure what office I will be working in yet, but I'll keep you updated!

In other great news...


I made my last loan payment on my undergrad!!!!!!! My Bachelor's is paid off!!!!!!!!!

Since we paid cash for my current school that means the only debt we have left is our mortgage!

FriYAY 5.8.15

It's Friday, ya'll!



As some of you know, I did my externship interviews on Monday. I was so blessed to get offers from all four places I interviewed with. I happily accepted an externship with Spectrum Health, one the largest healthcare networks in West Michigan. I'm excited to be a part of their team for five weeks starting on June 8. I'm not sure what office I will be working in yet, but I'll keep you updated!


I don't know where the time has gone. It feels like it was just January and I was just quitting my job and starting this journey. I have only four more weeks of classroom instruction, a 160-hour externship, and a certification test to take until I can work official work as a Medical Assistant. I can't wait! Only two more months!



As you all have probably heard, Royal Baby #2 was born last Saturday! Her name was released on Monday. Will and Kate named their daughter Charlotte Elizabeth Diana. Her official name is Her Royal Highness Princess Charlotte Elizabeth Diana of Cambridge.

Will, Kate, George, and four-day-old Charlotte headed to their country home Amner Hall in Norfolk on Tuesday. The Queen was able to meet her newest great-grandchild shortly after their arrival. Princess Charlotte is fourth in line to the thrown.


I bought my first non-country CD in years.

2015 Met Gala Fashion

Let's talk about this year's Met Gala fashion. This year's theme was "China: Through The Looking Glass" and I think the celebs took the theme a too literally. I had to dig through some really ridiculous get-ups (ie Sarah Jessica Parker and Rhianna), but I was able to find some dresses I liked.
