Dinner: Impossible - Shopping and Prep

My husband and I took a last minute trip "up north" this weekend. It was an amazing time for us to be away from home, relax in a different setting, and reconnect. We both agree that we need to this sort of thing more often! Our poor little fur baby got his first bee sting! Luckily he did not experience any swelling or any effects from the sting.

I was a little apprehensive about going more than three hours away to what used to be the hubs' grandparents' house for the weekend because I had planned for Saturday to be my shop and prep day for Dinner: Impossible. I knew I'd be tired when we arrived home on Sunday, but going away was worth it. I got a spend a little quality time with the in laws and my oldest nephew Ross - who is turning into a really cool young man. I was able to connect a lot with my husband, Nick, on the three hours to and from, and spent some quality time with him at the house.

 

THE SHOPPING TRIP





I was indeed pretty exhausted when we arrived home on Sunday at about 3:30pm. I felt like scrapping the whole Dinner: Impossible this week, but Nick kept me motivated by offering to go the grocery store with me. What an amazing dude!




He helped me knock out the list in no time.






PREP


Once we got home I prepped Monday through Wednesday's dinners (Spinach and Sausage Pasta Bake, Chinese Chicken Stir Fry, and Turkey Meatloaf).



1. Boiling the noodles and browning the sausage for the pasta bake.
2. Mixing the spinach, marinara sauce, and browned sausage.
3. Cutting up the veggies for the stir fry. I also cut chicken breasts in to cubes (not shown).
4. Combined the ground turkey with ketchup, bread crumbs, garlic and onion powder, and fresh herbs for the meat loaf.

  1. I really need to make weekly shopping lists. I end up running to the grocery store way too many times to pick up different ingredients!
