What I Did in Quarantine

I head back to work full time on Monday after working minimally for two and half months. At first I hated quarantine. I hated how it made it impossible to go on my Greece trip and how it interrupted my routine. However,  I grew to love it, and I will always cherish the time I've had for myself and the extra time I've spent with Nick.



I was somewhat productive and somewhat not, but here's what I did in quarantine.

Quick and Easy Restaurant Style Salsa

A fresh tasting, simple salsa perfect for summer! 



This recipe is for hot salsa. If you like a more medium salsa sub Rotel Hot Diced Tomatoes and Habaneros with Rotel Original Diced Tomatoes and Green Chiles or use Rotel Mild Diced Tomatoes and Green Chiles for a mild salsa.

What You'll Need

28 oz can of diced tomatoes
15 oz of Rotel  Hot Diced Tomatoes and Habaneros
4 cloves of fresh minced garlic
1 tablespoon of honey
1/2 teaspoon of cumin
3/4 cup of cilantro, chopped and loosely packed
3 tablespoons of fresh lime juice (from about 1.5 medium sized limes)
1/4 to 1 teaspoon of salt

What You'll Need to Do

Place all ingredients expect for the salt in a blender or food processor.
Blend until well combined (about 1 minute).
If desired, add salt 1/4 teaspoon at a time until desired taste is achieved.
Refigerate for at least 1 hour before serving.
ENJOY! 




DIY Cellulite Scrub

Between 80 and 90 percent of woman will experience cellulite. Cellulite occurs when fat deposits push through the connective tissue beneath the skin. Awesome, right? Losing weight and strengthening the muscles may make cellulite less noticeable, but won't make it go away.


The ingredients in this cellulite scrub can temporarily plump skin and help reduce inflammation. It's the perfect scrub for summer shorts and mini-dresses!

What You'll Need:

1 cup of raw sugar
1/2 cup of coconut oil
20 drops of grapefruit essential oil

What You'll Need to Do:

Stir together all ingredients.
Rub the mixture over damp skin focusing on the thighs and butt.
Gently rinse.

Extra Tips:

The coconut oil plumps the skin temporarily.
Grapefruit oil is high in anti-inflammatory enzymes.

Use a lip balm with at least an SPF 30. The SPF will help protect your lips against UV damage from the sun that causes skin cancers and wrinkles.

Use a lip oil during the day instead of lip gloss. A tinted lip oil is a lot more nourishing while still giving the same shine and color as lip gloss. Lip oils absorb fast, but offer long lasting moisture. Find one that contains nut or seed oil.

When her defense failed to convince a jury that the shooting was self defense, not murder, she was sentenced to life in prison. In the years that follow, with Cyntoia being diagnosed with fetal alcohol syndrome, significant muturation during her incarceration, earning a college degree, a key change in Tennessee law regarding sex trafficking, and a former prosecutor on her side, her argument for legal clemency got stronger and stronger. In 2017, with a new pro-bono legal team, Cyntoia hopes to have her sentence commuted with a plea to then-Governor Bill Haslam.

Coconut Cream Pie Bars




What You'll Need

for the crust:
1 box of white cake mix
1 box (3 oz.) of coconut cream instant pudding mix
1/2 cup of unsalted butter, melted
1 large
 egg

for the filling:
1 8 oz. package of cream cheese, softened
3 large eggs are room temperature
1/2 cup of unsalted butter, melted
2 teaspoons of coconut extract
2 cups of powder sugar
2 cups of shredded coconut
1-2 teaspoons of powdered sugar for garnish

What You'll Need to Do

Preheat the oven to 350 degrees.
Lightly grease the parchment lined 13x9 inch baking dish.

for the crust:
In a large bowl, add in cake mix, pudding mix, melted butter, and egg.
Blend with an electric mixer on medium-low speed just until ingredients are combined.
Press the mixture into the bottom of the baking dish.

for the filling:
Blend cream cheese in a large bowl with an electric mixer on medium speed for 1 minute.
Add in eggs one at time and mix with electric mixer until well blended.
Add in coconut extract, powdered sugar, and melted butter. Blend until well combined.
Fold in shredded coconut.
Spread batter evenly over crust layer.
Bake for 35-40 minutes or until edges are golden brown and the center is mostly set.
Place on wire rack to cool to room temperature.
Cover with Saran Wrap of foil and refrigerate for 2-3 hours.
Cut into squares.
Dust with powdered sugar.
