Friday Recipe: Potato Corn Chowder

Happy October! It's really Fall now and it's starting to chill out (yes, that is my own made up phrase for 'cooling off'). Fall to me means comfort food. I really like crockpot recipes that I can come home to on a week night or start on a Saturday morning. I especially love soups!




What You'll Need:
1 16 oz package of frozen corn
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 teaspon of dried oregano
1 /12 lbs red potatoes
1 teaspoon of dried thyme
6 cups of chicken stock
3 tablespoons of all purpose flour
2 tablespoons of unsalted butter
1/4 cup of heavy cream
salt and pepper to taste
What You'll Need to Do:
Place potatoes and corn into a slow cooker.
Stir in flour and gently toss to combine.
Stir in chicken stock, thyme, oregano, garlic powder, onion powder, salt and pepper to taste.
Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
Stir in butter and heavy cream.
Serve immediately.
