MDW Classic Potato Salad

Memorial Day Weekend is the unofficial start to the summer, backyard barbecues, and park picnics! Fire up the grill and get the side dishes ready!

What You'll Need

5 large white potatoes, peeled and cut
1 cup of  sweet onion, diced
1 cup of celery, diced
1 1/2 cups of mayonnaise
1/2 cup of sour cream
1 tablespoon of yellow mustard
2 tablespoons of salt
1/4 teaspoon of sea salt
1/4 teaspoon of white pepper
2 tablespoons of apple cider vinegar

What You'll Need to Do

Peel the potatoes and cut each one into 4 to 6 large chunks.
Place potatoes in a large pot of cold water making sure they are covered by at least 2 inches of water.
Add 2 tablespoons of salt to the water and bring to a boil.
Turn heat down to medium and vigorously simmer potatoes until a fork easily goes through (about 15 minutes).
In the meantime, dice onion and celery and set aside.
Combine mayonnaise, sour cream, apple cider vinegar, and yellow mustard in a small bowl.
Drain the potatoes and let them cool for about 5 minutes or until they stop steaming.
Mash potatoes very lightly keeping some larger chunks.
Add onions, celery, sea salt, and water pepper.
Add in the dressing slowly folding in until incorporated.
Cover and chill before serving.
ENJOY!
